The MME offerings I've seen today seem to be in the 10M simultaneous bearer range. That means you'd need 400 MMEs to reach 4 billion bearers to reach the /32 allocation exhaustion.
I'd imagine the S/PGW are in the same scalability range, so I'd say that before you run into the /32 problem with IPv6, you'd hit a lot of other problems long before that.
Basically, the current LTE framework with GTPv2 tunnels for everything will run into scalability problems long before the current /64 per bearer framework will.
